Thierry Hellebois is currently a PhD candidate working in collaboration between Laboratoire d'Ingénierie des Biomolécules (LIBio), University of Lorraine, France and Luxembourg Institute of Science and Technology (LIST), Esch-sur-Alzette, Luxembourg in the domain of sustainable functional food product innovation. His PhD project has received full funding from the Luxembourg National Research Fund (FNR). Thierry holds a BSc degree in Cell and Physiology granted by the University of Lille, and a MSc degree in Food, Nutrition and Cosmetic product development and characterisation awarded by the University of Lorraine. His current research interests are with sustainable food production systems, eco-green valorisation of agro-food industry side streams for mining of added-value biomolecules (e.g. polysaccharides, proteins, bioactive compounds etc.) of food/nutraceutical interest etc. His PhD project aims at investigating plant seed green extracted biopolymers as multi-functional structurants of xero-scaffolds embedding human gut relevant living cells.
