Biological mechanisms are often based on the formation of supramolecular architectures by self-assembly. The transient interactions involved are dependent on environmental physicochemical conditions (temperature, pH, ionic strength, concentrations...) and can result in multiple functional structures or not. This approach, based primarily on thermodynamic aspects, requires a thorough understanding of the mechanisms of self-Assembly of polymers as well as an in-depth knowledge of interactions.

The integration of all the phenomena that occur during the structuring of the soft material can lead to control and structure vectors and/or matrices. This strategy enables the vectors to protect and release model molecules according to specific physicochemical conditions. To increase the ability of polysaccharides to interact in order to form supramolecular architectures, the latter are functionalized by enzymatic means to modify their structure by grafting new patterns (phenolic compounds). This strategy increases the understanding of the close relationship between the structure of a polymer and its ability to spontaneously create objects, alone or in combination.
